Recipes

Ok, everyone has had time to explore some recipes.  List your winners for others to try.  Seems just about everyone has chicken and eggs.

You can list your failures as well....

For instance, I tried to broil apple slices - nope.

  1. I haven't had any really successful, yummy recipes yet. Pretty much been eating everything doused in salt, pepper, and olive oil. I did, however, make a salad dressing with olive oil, pure apple juice, and apple cider vinegar, oh and salt. :) Stretching it, maybe. But it sure did make my spinach, apple, and chicken salad much better. Another stretch...I found sweet potato and apple chips at publix!!! yay quick convenient crunchy chips!

  2. I am just curious as to how everyone is doing? Things are good. I like the simplicity of only having a few options to eat. I am so glad I added cheese it has made things really nice. Most days at lunch I eat a grilled cheese with spinach on it. In the mornings I have a spinach and cheese omelet and my evening meal varies, but always includes a sweet potato and chicken. The thing I am struggling with the most is drinking only water and coffee. I like water and coffee, but I didn't ralize how many times I would grab a diet drink or lemonade from Chick-Fil-A instead of a snack. I feel like I have triumphed over Diet Mountain Dew!! I have enjoyed this so far and look forward to how the next few weeks go. I have already become more aware of the excess around me more than I was before. What will it be after seven months!?!?!

      it is interesting that I have a heightened sense of how much we have - how much excess. And this is just the food portion. I grilled chicken tonite and it was nothing more than salt and pepper and olive oil and it really was delicious. Usually, i would douse it in all kinds of flavors and sauces and seasonings. Good, yes. Necessary, absolutely not.

      I have become aware of how much junk I put in my body and don't really think of it. I would have told you that I was a fairly healthy eater before. Not now. I was constantly stuffing my body with all kinds of junk and really unaware of it.

      I may not stick to 7 foods (well 6 foods and coffee), but I really do think i am going to be more aware of what goes in.

  3. Whole grain bread dipped in olive oil with cracked pepper and salt. That's getting me through this challenge. Oh, and those Seneca apple and sweet potato chips when I need a snack that crunches. Otherwise, I'm plain so far. I will say that Jackie across the street grilled some chicken wings for us the other night and I almost kissed her on the mouth.

  4. I made something tasty last night!!!! Chicken and sweet potato stew....IT.WAS.SO.GOOD. and it's weight watchers-bonus! (isn't probably this whole month weight watchers???) Of course, I omitted everything not 7-approved. And then it calls for cabbage, so I just used spinach, which is on my list. I did use just a smidgen of apple cider vinegar to deglaze the pan after browning the chicken. This gets the browned-chicken bits off the bottom of the pan so it flavored the broth. yummy!

  5. This is not related to recipes, but I am posting here anyway. Around the first of this year I started thinking about going back to work. I was a teacher until 6 years ago when we had our first child. I always planned on going back to work because I feel God wants me in the classroom as a teacher and I love teaching. So I started getting all my "ducks" in a row (when I say ducks I mean useless paperwork the state thinks makes better teachers). Well long story short I have to re-take four parts of the Praxis, which is like a national teachers exam. I found this out Thursday and have to take the first two parts Tuesday an the second two parts in April. So I am studying and brushing up on eveything this weekend. My first response would have been to grab carbonated drinks and a few snacks and get to studying after the kids go to bed. God has a funny sense of humor. He is really making me rely on him first with what I am eating and drinking at this stressful time and secondly with the short amount of time between now and Tuesday. I am really wanting to have a soda, so I thought I would post on here it helps me stay accountable.

  6. Stacy, so proud of the commitment. It would be so easy to use this surprise as an opportunity to "cheat". Isn't that the way it works with just about everything? It is easy to follow along when things are going as they should; it is when there are the surprises, the lows, the challenges that we can excuse our way to, well, our way!!
